Description

A refreshing salad combining artichoke hearts and white beans, perfect for a light meal or side dish.


Ingredients

  • 1 can (15 oz) artichoke hearts, drained and chopped
  • 1 can (15 oz) white beans (cannellini or navy), rinsed and drained
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the white beans, then place them in a large mixing bowl.
  2. Add the chopped artichoke hearts, thinly sliced red onion, and chopped parsley to the bowl.
  3. In a separate bowl, whisk together lemon juice and olive oil until well emulsified. Season with salt and pepper.
  4. Pour the dressing over the salad mixture and gently fold everything together using a spatula.
  5. Allow the salad to sit for 15-20 minutes to let the flavors meld before serving. Enjoy chilled or at room temperature.
