  • 1 cup vegetable broth
  • ½ cup heavy cream (or coconut cream for a vegan option)
  • ½ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Begin by boiling salted water in a large pot. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced butternut squash and sauté for about 10-12 minutes until softened.
  3. Stir in the minced garlic, thyme, and sage, cooking for an additional 1-2 minutes until fragrant.
  4. Transfer the cooked squash mixture to a blender. Add the vegetable broth and blend until smooth. If needed, add more broth to achieve your desired consistency.
  5. Return the blended sauce to the skillet. Stir in the heavy cream (or coconut cream) and season with salt and pepper. Cook over low heat for about 5 minutes, allowing the flavors to meld.
  6. Add the drained pasta to the skillet, tossing to coat with the sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired creaminess.
  7. If using, stir in the grated Parmesan cheese until melted and evenly incorporated.
  8. Remove from heat and garnish with fresh parsley before serving.
