Description
A delicious cheesy chicken bake with bell peppers and taco seasoning.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups mixed bell peppers (red, yellow, green), sliced
- 1 large sweet onion, sliced
- 2 tablespoons taco seasoning
- 2 cups shredded cheddar cheese
- ½ cup sour cream
- 2 tablespoons olive oil
- Fresh cilantro (optional), for garnish
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
- Heat olive oil in a large skillet over medium heat. Sauté sliced bell peppers and onions until softened (5-7 minutes).
- Add diced chicken and taco seasoning to the skillet. Cook until chicken is no longer pink (8-10 minutes).
- Layer half of the chicken mixture in the prepared baking dish, followed by half of the cheese. Repeat layers and top with remaining cheese.
- Bake for 25-30 minutes until golden brown and bubbly. Let cool slightly before serving, garnished with cilantro if desired.
Notes
- This dish can be served with tortilla chips or in taco shells.
- For a lower fat option, use reduced-fat cheese and sour cream.
