Ingredients

  • 2 lbs chicken breast or thighs, diced
  • 1/3 cup soy sauce
  • 6 cloves garlic, minced
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon sesame oil (optional)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup honey
  • 2 tbsp rice vinegar
  • 2 tbsp cornstarch
  • 1 cup cooked rice (brown, white, or quinoa)
  • Sesame seeds for garnish
  • Green onions, sliced (optional)
  • Red pepper flakes (optional)
  • Broccoli florets or other veggies (optional)

Instructions

  1. In a bowl, combine diced chicken, soy sauce, minced garlic, and optional brown sugar. Toss and let marinate for 10-15 minutes.
  2. In a separate bowl, mix the honey, rice vinegar, and cornstarch to create the sauce.
  3. Heat oil in a large pan over medium-high heat. Add chicken and cook until golden brown and cooked through, about 7-10 minutes. Set aside.
  4. In the same pan, pour in the sauce mixture and bring to a simmer. Cook for 1-2 minutes until thickened.
  5. Return chicken to the pan, toss to coat in the sauce, and cook for another 2 minutes.
  6. Serve the chicken over rice with your choice of veggies. Garnish with sesame seeds, green onions, and red pepper flakes if desired.
