- 2 tsp chili powder
- 4 cups low-sodium vegetable broth
- Juice of 1 lime
- 1 avocado, diced (for garnish)
- Fresh cilantro (for garnish)
Instructions
- In a pot, heat olive oil over medium heat. Sauté onions and bell peppers until softened (5-7 minutes).
- Add minced garlic, cumin, and chili powder; cook until fragrant (about 1 minute).
- Stir in black beans and vegetable broth. Bring to a gentle boil.
- Reduce heat to low and simmer uncovered for 20-25 minutes.
- Remove from heat; stir in lime juice and adjust seasoning as desired.
- Serve hot, garnished with diced avocado and cilantro.
