Description

This creamy chicken gnocchi soup is a comforting and delicious dish packed with flavor and wholesome ingredients.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 lb fresh gnocchi (or frozen)
  • 2 medium carrots, chopped
  • 1 cup frozen peas
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • to taste Salt and pepper
  • 2 tbsp olive oil

Instructions

  1. Dice the chicken breasts into bite-sized pieces. Chop the onions and carrots.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant (about 3 minutes).
  3. Add chicken, salt, pepper, and thyme; cook until golden brown (5-7 minutes).
  4. Stir in carrots and peas; cook until slightly tender (3-4 minutes).
  5. Pour in chicken broth and add gnocchi; simmer gently for about 5 minutes.
  6. Lower heat and mix in cream cheese until melted and creamy.
