- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 lb fresh gnocchi (or frozen)
- 2 medium carrots, chopped
- 1 cup frozen peas
- 4 cups low-sodium chicken broth
- 4 oz cream cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme

- 2 tbsp olive oil
Instructions
- Dice the chicken breasts into bite-sized pieces. Chop the onions and carrots.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant (about 3 minutes).
- Add chicken, salt, pepper, and thyme; cook until golden brown (5-7 minutes).
- Stir in carrots and peas; cook until slightly tender (3-4 minutes).
- Pour in chicken broth and add gnocchi; simmer gently for about 5 minutes.
- Lower heat and mix in cream cheese until melted and creamy.

- This soup can be made with fresh or frozen gnocchi.
