Description

Ingredients

  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ¾ cup plain yogurt
  • 2 large eggs
  • ½ cup olive oil
  • ⅓ cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, cardamom, and salt.
  3. In a large bowl, whisk together the sugar, yogurt, eggs, olive oil, orange juice, orange zest, and vanilla extract until smooth.
  4. Stir the dry ingredients into the wet mixture just until no flour remains. Avoid overmixing.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
