Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 8 oz cream cheese (softened)
  • 1/2 cup butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
  2. Stir in flour, baking soda, salt, and pumpkin pie spice. Mix until just combined.
  3. Pour batter into a greased 9×13-inch pan and bake at 350°F (175°C) for 25–30 minutes, or until a toothpick inserted comes out clean.
  4. Let the bars cool completely before frosting.
  5. In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
  6. Spread frosting evenly over cooled bars.
  7. Slice into 20 squares and serve.
