Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium sweet onion, chopped
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Chop the garlic and onion, and measure out your spices.

  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature should be 165°F).

  3. Sauté Vegetables: Remove the chicken and set aside. In the same skillet, add chopped onions and garlic; sauté for about 3-4 minutes until translucent.

  4. Create the Sauce: Pour in the chicken broth and bring to a simmer. Add heavy cream along with paprika, thyme, salt, and pepper. Stir occasionally and cook for about 5-7 minutes until slightly thickened.

  5. Return Chicken to Skillet: Nestle seared chicken back into the sauce, cover, and let simmer on low heat for another 10-15 minutes.

  6. Serve It Up!: Plate the smothered chicken over rice or mashed potatoes, garnishing with fresh herbs if desired.
