- 3 medium zucchini
- 8 ounces spaghetti
- 1 tablespoon olive oil
- 1 pound ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 can (15 ounces) tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
- Cook spaghetti according to package instructions and set aside.
- In a skillet, heat olive oil over medium heat. Add ground beef, onion, and garlic; cook until beef is browned.
- Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Mix cooked spaghetti into the meat mixture.
- Fill zucchini boats with the spaghetti mixture and place in a baking dish.
- Top with mozzarella cheese.
- Bake for 25–30 minutes until zucchini is tender and cheese is bubbly.
Notes
- For extra flavor, add red pepper flakes to the meat mixture.
- Use any ground meat in place of beef if desired.
