- 1 cup half-and-half
- 1 rotisserie chicken (chopped)
- 2 (15-oz) cans white kidney beans (drained)
- 1 (11-oz) can white corn (drained)
- 2 (4-oz) cans chopped green chilies
- Spices (cumin, chili powder, garlic powder, onion flakes)
- 2 cups shredded pepper jack cheese
Instructions
- In a Dutch oven, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes until golden.
- Gradually whisk in chicken broth and half-and-half; bring to a boil and cook until thickened.
- Add chopped rotisserie chicken, beans, corn, green chilies, and spices; stir until combined.
- Reduce heat to low and simmer for an additional 10 to 15 minutes.
