- 3 boneless, skinless chicken breasts
- 1 cup pepperoni slices
- 2 cups shredded mozzarella cheese
- ½ cup pizza sauce
- 1 tsp Italian seasoning
- 4 sub rolls or English muffins
- 2 tbsp olive oil
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and season chicken breasts with salt and Italian seasoning. Cook until golden brown and fully cooked, about 6-7 minutes per side.
- Shred the chicken while warm and mix it with pizza sauce until well-coated.
- Arrange sub rolls on a baking sheet and top each with shredded chicken, pepperoni slices, and mozzarella cheese.
- Bake for 10-12 minutes until cheese is melted and bubbly.
- Allow to cool slightly before serving.
