Key Ingredients for Easy Chicken Noodle Soup

Comfort food at its best is undoubtedly an inviting bowl of easy chicken noodle soup. It’s nostalgic, soothing, and can warm you up on a chilly day. Below, I’ll break down the essential ingredients that make this soup not just tasty but also incredibly heartwarming.

  • Chicken: I recommend using boneless, skinless chicken breasts for this recipe. They cook quickly and remain tender. If you prefer, you can use thighs for a richer flavor. Don’t forget that using homemade chicken broth can elevate your soup’s taste to the next level!

  • Noodles: Egg noodles are the classic choice, offering a soft, chewy texture. They absorb the broth beautifully and add to the soup’s hearty nature. If you keep gluten-free noodles handy, they work just as well.

  • Vegetables: A mix of carrots, celery, and onion brings out the best flavors. Sautéing these aromatics creates a fragrant base that enhances the overall taste of your soup. Fresh herbs like parsley can give a light, refreshing finish.

  • Broth: Homemade chicken broth is ideal, but low-sodium store-bought versions are great for time-saving. The broth serves as the heart of your soup, so choose one that complements your taste.

  • Spices: A pinch of salt, pepper, and garlic powder can really enhance the flavors. Add a bay leaf while simmering for a warm depth of flavor that ties everything together.

Each of these ingredients plays a vital role in creating a wonderful easy chicken noodle soup that nourishes both body and soul. Enjoy the process of cooking, and soon enough, you’ll have a delightful pot of soup simmering on your stove!

Cooking Tips and Notes for Easy Chicken Noodle Soup

Creating a comforting bowl of easy chicken noodle soup can feel like a warm hug after a long day. Here are some tips to elevate your soup-making experience, ensuring flawless results every time.

Choosing the Right Chicken

For this recipe, using bone-in, skin-on chicken thighs adds rich flavor to your broth. If you’re pressed for time, rotisserie chicken is a fantastic option. Just remember to shred the meat before adding it to the soup to maintain that tender texture.

Perfecting the Broth

Homemade broth is ideal, but store-bought works well when you’re short on time. Always taste your broth before adding any salt; remember, some varieties can be quite salty already!

Noodle Selection

Opt for egg noodles as they hold up wonderfully in the soup, soaking in all the delicious flavors. Just be cautious not to overcook them; add the noodles in the final 10 minutes of cooking to ensure they’re perfectly tender without becoming mushy.

Vegetable Variations

Feel free to experiment with vegetables! Carrots and celery are classic, but adding spinach or kale towards the end of cooking provides a pop of color and nutrition, enhancing that homemade touch.

Enhance the Flavor

A splash of lemon juice or a hint of fresh herbs like dill or parsley can really brighten the flavor of your soup. Don’t be shy—try adding a little at a time until the taste is just right!

By keeping these tips in mind, your easy chicken noodle soup will not only be delicious but a delightful go-to meal any day of the week. Enjoy!

A comforting and hearty chicken noodle soup made with tender chicken, vegetables, and egg noodles.

Ingredients

Scale
  • 2 (32 ounce) cartons chicken stock
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 pound boneless chicken (breast, thighs or tenderloins)
  • 1 cup finely diced carrots
  • 1/2 cup finely diced celery
  • 10 ounce can cream of chicken soup
  • 3 cups water
  • 3 cups egg noodles, uncooked
  • salt and pepper, to taste

Instructions

  1. In a large stock pot, pour in 2 (32 ounce) cartons chicken stock, 1/2 teaspoon poultry seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder and 1 pound boneless chicken. Give it all a good stir.
  2. Cover and cook on medium to medium-high heat for about 20-25 minutes (or until chicken is cooked through).
  3. Once chicken is cooked, using tongs, take chicken out of pot and shred it or cut it up using two forks (be careful, the chicken will be very hot).
  4. Put the shredded chicken back into the stock pot.
  5. Then add 1 cup finely diced carrots, 1/2 cup finely diced celery and 10 ounce can cream of chicken soup and stir well.
  6. Add 3 cups water and 3 cups egg noodles, uncooked and stir again.
  7. Cover and cook on medium heat for about 15-20 more minutes until veggies are tender and noodles are soft.
  8. Give it a taste test. I usually find I need to add salt and pepper. I usually add a couple teaspoons of salt and a teaspoon of fresh black pepper (but this is up to your tastes, etc.)
  9. Then serve!

Notes

  • This recipe is versatile; feel free to add additional veggies like peas or corn.
