- 4 large flour tortillas
- 1 lb lean ground beef
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 1 cup diced bell peppers (mixed colors)
- 1/2 cup diced onion
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Sour cream or salsa (for serving)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
- Add diced onions and bell peppers; sauté until softened (about 5 minutes). Season with chili powder, cumin, garlic powder, salt, and pepper.
- On a clean surface, lay one tortilla flat. Spread half of the beef mixture on one side and top with shredded cheese.
- Fold the tortilla over like a taco and heat in a non-stick skillet over medium heat. Cook for 3-4 minutes on each side until golden brown and crispy.
- Slice into wedges and serve warm with sour cream or salsa.
